Olio Polidori
Since 1969, a story of family and passion.
Mario Polidori, since he was a child, dedicated himself to the land of Monte Pisano and in particular to Buti, a village rich in ancient traditions in the cultivation of olive trees.
Knowledge, experience and values handed down from generation to generation led him, in 1969, to found a family-run company dedicated with passion to the production of extra virgin olive oil.
Since then, Polidori have been producing and marketing extra virgin oil in compliance with traditional cultivation and processing techniques, with the constant objective of guaranteeing quality and genuineness.
Today the company is led by Roberto and Alessandro, together with Manrico, with the same attention to the territory, sustainability and product quality.
A special memory goes to Mario and Disma, who passed on to Polidori the values of life and the secrets of this extraordinary work.
The Process
In Polidori's oil mill every detail is designed to guarantee the highest quality of the final product.
Polidori use a Mori-Tem Olio Mio Gold 200 plant, a small modern crusher that allows Polidori to carefully follow every processing phase, maintaining high quality standards and constant control over the production process.
Thanks to cold pressing technology, olives are processed while preserving their authentic organoleptic properties, aromas and authentic flavors, giving life to a genuine and high-quality extra virgin olive oil.
Tradition and innovation thus meet in Polidori's oil mill, to offer a product that contains all Polidori's passion and the excellence of the territory.
The Territory
Buti is a village on Monte Pisano, in Tuscany, where nature, history and tradition have coexisted for centuries. Among olive groves, hills and the historic center, this village retains an authentic identity that is also reflected in the way of living and working the land.
Its roots are ancient and the bond with the community is still very strong: historic churches, alleys, squares and a living popular culture tell of a territory rich in memory. Among the most heartfelt events is the Palio di Buti, a symbol of the districts and local pride.
It is in this context that Polidori's production is born: an extra virgin oil that brings with it the character of the place, the passion for quality and respect for tradition.
